Top 5 Food Recipes for Autumn

Autumn is one of the lovely seasons of the year due to is cool weather. In addition, it can bring several nostalgic and warm memories. Here is a five-recipe list for warm and lovely autumn.

Creamy Coconut Beef and Pumpkin Curry

Ingredients

1 tbsp Peanut Oil

1 tbsp Chopped Fresh Ginger

80g (1/3 cup) Curry Paste

1.5kg Beef Steak, Divide into 4 Pieces

400g Can Chopped Tomatoes

250ml (1 cup) Vegetable Liquid Stock

A Handful of Curry Leaves

600g Peeled, Deseeded Pumpkin, Cut to Cubes

1 tbsp Corn Flour

270ml Can Coconut Cream

Recipe

Start by overheating a large and deep pan, after that add the ginger and cook it for 1 minute or until it become softer.

Next, add the curry paste and leave it on fire until it becomes aromatic. Shortly, add the beef and leave the whole combination on fire until it coated.

Now, move the mixture a slow and low cooker fire, before adding the tomato, stock, and some curry leaves. Leave the whole combination for at least five hours until it becomes tender, next add the pumpkin.

After that, add the corn flour to 80 ml (1/3 cup) coconut cream in a small bowl and combine them together, and add the mixture to the beef combination and leave it for 10 minutes until it thickens.

Now, you can serve it with steamed rice after adding some curry leaves on the top as decoration.

Spaghetti with Tuna and Garlic

Ingredients

1/2 cup (125ml) Extra Virgin Olive Oil

125g Fresh Breadcrumbs

1 Crushed Garlic Clove

1/2 tsp Dried Chili Flakes

1 tbs Dried Oregano

250g Sliced Tuna Pieces

2 Lemons' Juice

1 Small Orange Juice

400g Spaghetti

60g Sliced Dried Tomatoes

60g Sliced Olives

1/2 cup Chopped Basil Leaves

1/4 cup (45g) Chopped Capers

Recipe

Heat the oil in a fry pan over medium heat and cook breadcrumbs for 2 minutes or until golden, next, add garlic, chilli and oregano. Cook them for a minute before leave it aside.

After that, mix the tuna slices in a bowl with lemon and orange juice, and season them for a couple of minutes. Now, cook Spaghatti according to the traditional way and leave the cooked Spaghatti aside.

Next, combine dried tomatoes, olives, basil, capers and some olive oil. Add Spaghatti to the combination and add the tuna slices. Decorate the dish with some fresh basil or orange and lemon slices.

Toasted Ravioli

1/2 Cup of Milk

1 Cup of Breadcrumbs

1/4 Cup Grated Parmesan Cheese

Salt, and Ground Black Pepper

1kg Ravioli

Vegetable Oil for Frying

Marinara Sauce for Serving

First thing is mixing milk and eggs together in a deep bowl, next sinking the flakes of ravioli in the combination, after that placing them in breadcrumber and parmesan cheese.

After that put the ravioli on backing sheet and leave them 30 minutes to freeze.

Next in a large fry ban over medium heat until it heats, next, fry ravioli until golden. Place on a paper towel the fried pasta, and spread some parmesan on the top. Serve it warm with the marinara sauce.

Apple and Berry Pies with Homemade Custard

Ingredients

For Dough

1 2/3 cups Plain Flour

1/4 cup (35g) Icing Sugar

140g Chopped, Chilled Unsalted Butter

1 Lightly Beaten Egg

1 Egg Yolk

For the APPLE & BERRY Filling

250g Mixed Frozen Berries

2 tsp Lemon Juice

2 Large Cored, Peeled, and Thinly Sliced Apples

1/3 Cup (80g) Brown Sugar

For Custard

600ml milk

100ml Pure Cream

1 Vanilla Bean

4 Egg Yolks

60g Caster Sugar

2 tsp Corn Flour

Recipe

First step is preparing the dough itself by mixing flour, icing sugar, and butter in the food processor until it crumbs, after that add an egg yolk, and 1/4 cup of cold water. Whiz the mixture until it forms a smooth ball.

Enclose the dough in a finely closed plastic wrap and chill for 30 minutes.

During the period of chilling, preheat the oven to 190°C, and prepare the baking tray with baking papers.

Moving to the filling, mix berries, lemon juice, apple and sugar in a bowl, and leave the mixture aside.

Divide the dough into four and roll out each piece on a lightly floured surface into a 15cm circle.

Next, put the pieces of dough to baking tray and add a handful of filling in the center of each piece, leaving a 3cm border.

Don't forget to fold over pastry edge to enclose filling, pressing down lightly with your fingers to seal, and brush the pieces with beaten egg. Bake them for 20-30 minutes until it earn a lovely golden color.

For custard, place milk, cream, vanilla into a pan over medium heat. On the other hand, mix egg yolks, sugar and corn flour together until smooth.

As soon as milk mixture starts to bubble, pour it into egg yolk mixture, while blending carefully.

After that move the mixture back to the pan and place over low heat. Blend it with a wooden spoon for until it thickens.

Now, serve the pies with the warm custard.

White Hot Chocolate

Ingredients

Divided 3/4 Cup Milk

1/2 Cup White-Chocolate Chips

Whipped Cream

Marshmallows, Chocolate Chips, Cinnamon Powder for Decoration

Recipe

In a small deep pan, heat 1/4 cup milk and chocolate chips over medium heat, mix the combination until chocolate melts.

Next, add the rest of the milk and heat to warm. After that, pour the mixture into 2 or 3 glasses.

Decorate the cups with whipped cream and marshmallows, chocolate chips, cinnamon powder.
