Mafé… Traditional Sauce in Senegal

While Egypt is hosting the 32nd edition of Africa Cup of Nations, one of the most powerful football championships world-wide, (SEE) shed light on the most famous dishes of the 24 countries taking part in the tournament.

As Senegal is a Muslim country, its cuisine depends on halal meat in protein main dishes.

Dining tables there mainly consist of meat, rice or couscous. Here’s Mafé; one of the most savory recipes in the country.

Ingredients

2 lb lamb meat, diced into 1-inch pieces

1 onion, finely chopped

½ cup creamy peanut butter

5 tbsp tomato paste

4 carrots, peeled and cut into 1-inch pieces

3 sprigs fresh thyme

2 bay leaves

2 tbsp peanut oil

1½ cups cold water

2 cups hot water

Salt, black pepper

 

Recipe

In a saucepan, heat some oil then add onion and cook over medium heat until it becomes translucent.

Add the meat and stir occasionally until it gets light brown color from all sides.

In a small bowl, mix peanut butter with cold water and pour them over the meat.

Dilute tomato paste with 2 cups of hot water and pour over the meat.

Stir all components well then add the remaining ingredients and lower the heat.

Cover the pan and stir occasionally for 1 hour or until the meat is tender.

Eventually, remove thyme sprigs and bay leaves and serve hot with white rice.
