Kachumbari from Kenyan Cuisine

While Egypt is hosting the 32nd edition of the Africa Cup of Nations, one of the most powerful football championships world-wide, SEE sheds light on the most famous dishes of the 24 countries taking part in the tournament.

Today we focus on one of the most prominent dishes in Kenya called Kachumbari.

Diced tomato and onion are the main ingredients here beside chili pepper, cilantro and sometimes avocado.

Kachumbari from Kenyan cuisine

Ingredients

1 medium red onion, diced

1 tsp salt

2 large tomatoes

Avocado

1 tsp chili pepper (optional)

l tbsp lemon juice

1 tbsp fresh cilantro, chopped

Recipe

In a small bowl, add the diced onion then massage the salt into the onion pieces.

Cover the salted onion with water and set aside for 10 minutes.

In another bowl, add diced tomatoes, avocado and chili.

Drain the onions and add them to the vegetables.

As a final step, add lemon juice and cilantro then stir all components well.
