While Egypt is hosting the 32nd edition of Africa Cup of Nations, one of the most powerful football championships world-wide, (SEE) shed light on the most famous dishes of the 24 countries taking part in the tournament.
Mupotohayi is cornmeal bread common in Zimbabwe. Check the recipe:
Ingredients
1 1/4 cup cornmeal
1 1/2 cup all-purpose flour
1 cup buttermilk
½ cup sugar
⅓ cup vegetable oil
½ tsp salt
1 egg
1 tsp baking powder
½ tsp baking soda
Recipe
In a jug, add buttermilk, oil, egg then whisk them all and set aside.
In a bowl, sift cornmeal, flour, baking powder, baking soda, salt and sugar, then stir all well.
Make a hole inside the mixed dry ingredients and pour the liquid mixture in.
Mix all components together until you get a coherent texture.
Grease a baking tin and dust it with some flour then pour your mupotohayi in.
Preheat oven to 177 C and bake for about 45 minutes or until skewer comes out clean when inserted.
