Shank Meat Recipe with Delicious Sauce

It’s a known fact that shank meat is delicious and the best way to cook it is with this special recipe that focuses on the marinade using different herbs and flavors.

• The Ingredients 

1- 3 full beef shanks uncut.

2- 10 minces garlic cloves.

* For the Marinade 

1. 1 cup of yogurt.

2. 1 tablespoon of black pepper.

3. 1 teaspoon of peppercorns.

4. 1 teaspoon of clove.

5. 1 teaspoon of cardamom.

6. 2 bay laurel leaves.

7. 1 tablespoon of garlic powder.

8. 1 tablespoon of onion powder.

9. ½ grated nutmeg.

10. 2 tablespoons of lemon juice.

11. 1 tablespoon of vinegar.

12. 1 teaspoon of sugar.

First step

* For cooking the Meat

1. 1 large onion.

2. 5 cardamom seeds.

3. 5 clove seeds.

4. ½ tablespoon of mastic.

5. 2 teaspoons of salt.

* For the Sauce

1. 3 tablespoons of oil.

2. 3 tablespoons of flour.

3. 3 tablespoons of Worcestershire Sauce.

* The Recipe

1. Leave the entire shank uncut. And using a sharp knife make an incision in each shank, front and back before filling the incisions with garlic, then massage the rest of the shanks with the remaining garlic.

2. Mix all the ingredients of the marinade together before covering the shanks with it. Leave the shanks in the fridge for one or two days but don’t forget to turn it over in the marinade.

3. Drain the shanks from the marinade but leave the bay laurel leaves.

4. In a large pan, put ½ a cup of oil and when the oil is hot, cook each shank inpidually till golden brown on each side. Then, take off the heat.

5. Place the golden brown shanks in a clean pot filled with boiling water.

6. After 15 minutes, add the onion, cardamom, clove and mastic.

** The shank meat takes from 2 to 3 hours to cook depending on its size and weight. Cooking the meat on low heat is preferable.

** Cook the shank till it turns soft and buttery. Add boiling water while cooking if needed.

** When it’s cooked the shank will be half its original size.

** The Sauce

* Cook the flour in the oil before adding the shank’s broth gradually and stirring. Then, add the Worcestershire Sauce.

Finally, add the sauce to the shank’s meat before presenting the meat and sauce with rice. Enjoy!!
