Healthy Fried Cauliflower "Rice" Recipe ….. Healthy Cooking

There is no doubt that everyone likes and enjoys the Chinese fried rice but unfortunately the original recipe can be a bit unhealthy. So, here is a healthy fried rice recipe with cauliflower “rice” :

Ingredients:

 

  • 3 cups of cauliflower florets.
  • 2 tablespoons of soy sauce.
  • 1 tablespoon of sesame oil.
  • 1 tablespoon of fresh ginger.
  • ¼ a teaspoon of black pepper.
  • ¼ a teaspoon of salt.
  • 2 tablespoons of vegetable oil.
  • 2 beaten eggs.
  • 2 cloves of minced garlic.
  • 1 diced onion.
  • ¾ of a cup of chopped broccoli florets.
  • 2 grated carrots.
  • ½ a cup of frozen corn.
  • ½ a cup of frozen peas.
  • 2 thinly sliced green onions.
  • ½ a teaspoon of sesame seeds.

 

Instructions:

 

  • In a food processor, pulse the cauliflower florets for 2 to 3 minutes or until it resembles the rice, then set aside.

 

  • In a small bowl, mix the soy sauce, sesame oil, ginger, black pepper and salt before setting aside.

 

  • In a medium skillet, heat 1 tablespoon of the vegetable oil over low heat before cooking the eggs for 2 to 3 minutes on each side. Let them cool before cutting them into small pieces, then set aside.

 

  • In a large skillet, heat 1 tablespoon of the vegetable oil over medium high heat before adding the garlic and onions. Cook and stir till the onions turn transparent then add the broccoli, carrots, corn and peas. Cook for about 3 to 4 minutes or until the vegetables turn tender.

 

  • Add the cauliflower, green onions, eggs and soy sauce mixture before cooking for 3 to 4 minutes or until the cauliflower turns tender.

 

  • Top with the sesame seeds before serving and Enjoy!
