As we all know today, Thursday, is the International Coffee Day and what better way to celebrate other than baking these delicious and chewy coffee chocolate chip cookies. So, here the recipe:
Ingredients:
- ¾ of a cup of unsalted butter.
- 1 cup of dark brown sugar.
- 1/3 of a cup of white sugar.
- 1 egg.
- 1 egg yolk.
- 2 teaspoons of vanilla extract.
- ½ a teaspoon of salt.
- 1 ¾ cups of all-purpose flour.
- ¼ a cup of espresso powder.
- ½ a teaspoon of baking soda.
- ½ a cup of dark chocolate chips.
- Instructions:
- Stir the butter over medium heat till it foams and turns golden brown before taking it of the heat and leaving it to cool.
- In a large bowl, combine the cooled butter, brown sugar and white sugar. Mix together till well combined before adding the egg, egg yolk and vanilla extract. Combine everything together till smooth.
- In another bowl, mix the flour, espresso powder, salt and baking soda together before adding the dry ingredients into the wet ingredients and mixing well till the dough forms.
- Fold in the chocolate chips before refrigerating the dough for at least half an hour or overnight.
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper before scooping the refrigerated dough into balls and placing them 2 inches apart on the baking sheet.
- Bake for 11 minutes or until the edges are golden brown before leaving them to cool.
- Once cooled, serve the cookies and Enjoy!
