Al Fitr cookies, Al Qaraqesh or Mnen, is one of the favourite Eid Al Fitr recipes, It is delicious, and admired by everyone, in addition, it is one of the essential Eid Al Fitr mornings meals with tea and coffee.
Ameera Aboulseoud, the US-based Alexandrian Egyptian engineer and mother of a boy and girl, is always presenting several Egyptian meals for feeling the warmth of her memories in Alexandria during festivals and family occasions especially the desserts presented at special times.

She recalled the special cooking methods, and herbs and spices additions by the Alexandrian people in their dishes, so, Aboulseoud represented an easy recipe for the Al Qaraqesh or Mnen with all its tricks.
Ingredients:
4 Cups of Flour
1 Cup of Melted ghee (Should have the temperature of the kitchen)
½ Tablespoon of Yeast
1 Tablespoon of sugar
½ Teaspoon of salt
1 Tablespoon of dry fennel
1 Tablespoon of dry anise
1 Tablespoon of toasted sesame
Preparation:
The first step is adding all ingredients to the mixer, and add 1 cup of water, let them blend well for five minutes, and leave the dough to rest and for yeast to be activated for 15 minutes.
Next, roll the dough out with the wooden rolling pin to form a rectangle and pide it by the knife to form same-sized Qaraqesh or Mnen pieces.
After that, place the pieces of the dough on the baking tray and leave them for a few minutes to rest, and heat the oven well.
Move the Al Qaraqesh or Mnen pieces to the well pre-heated, 180 degrees, oven on the middle oven tray for 30 minutes, or for 20 minutes in case of using the oven convection fan.
