Easy Seafood Salad

This easy dish targets to mix the summer’s citrus and its special taste with the seafood as a marriage between the colors and the smell of the sea.

Ingredients

1 medium orange

1 medium lemon

1 medium lime

1/2 pound peeled and deveined cooked shrimp,

1/2 pound crabmeat,

2 tablespoons finely chopped sweet onion

2 tablespoons finely chopped sweet red pepper

lettuce

Method

Start with grating the zest from the orange, then Cut the orange crosswise in half; squeeze juice from the orange.

Place the zest and the juice in a large bowl. After that repeat the same with lemon and lime.

Next, add the shrimp, crab, onion, and pepper. Mix well, and Serve on lettuce.

Rustic Tomato Pie

Tomato’s taste is always great for summer, especially with a fluffy and light pie. Moreover, the addition of fresh herbs would enhance your experience greatly.

Ingredients

Dough for single-crust pie

1-3/4 pounds mixed tomatoes, seeded and cut into 1/2-inch slices

1/4 cup thinly sliced green onions

1/2 cup mayonnaise

1/2 cup cheddar cheese

2 tablespoons minced fresh basil

1/4 teaspoon salt

1/4 teaspoon pepper

2 beef bacon strips, cooked and crumbled

2 tablespoons grated Parmesan cheese

Method

Preheat the oven to 400°.

On a lightly floured surface, roll the dough to a 1/8-inch.-thick circle, and place it on a pie plate. Cut the crust to 1/2.

Place half of the tomatoes and half of the onions in the crust. Mix mayonnaise, cheddar cheese, basil, salt, and pepper; spread over tomatoes.

Top with remaining onions and tomatoes.

Fold the crust edge over the filling, Sprinkle with bacon and Parmesan cheese.

Bake on a lower oven rack until the crust is golden and the filling is bubbly.

It takes 30-35 minutes.

Leave it for 10 minutes before cutting

Mint-Cucumber Tomato Sandwiches

Tomato sandwiches would be perfect for a picnic or a long time at the beach. The fresh ingredients with the crusty texture of the bread will amuse you.

Ingredients

3 tablespoons butter

8 slices sourdough bread

1 large cucumber, thinly sliced

2 medium tomatoes, thinly sliced

1/4 teaspoon salt

1/8 teaspoon pepper

1/4 cup fresh mint leaves

Method

Spread butter over 4 slices of bread. Then, add cucumber and tomatoes; sprinkle with salt, pepper, and mint.

Top with remaining bread.
