Eggplant is one of the top useful and healthy options with great taste. It can be used for countless recipes such as Makluba, Baba Ghanoush, Moussaka, and others. So, talented food blogger Ameera Aboulseoud represented her tasty Mutabal dish.

Ingredients:
2 Eggplants
2 Tablespoons Yogurt
2 Tablespoons Tahini
2 Tablespoons Lemon Juice
1 Teaspoon Smashed Garlic
Salt
Some Hand-Smashed Walnuts
Directions
Place the eggplants in the oven at 200°C for 25 minutes for the first side, flip them to the other, and leave them for 20 minutes.
Once they come out of the oven, leave them to cool, then peel them, and mash the eggplants with a fork.
After that add all ingredients and blend them together.
Cucumber Salad
2 Cucumbers which cut into tiny pieces
2 Tablespoons of Knife-Chopped Parsley
1 Tablespoon of Chooped Fresh Mint
1/2 Teaspoon of Chooped Garlic
2 Tablespoons Olive Oil
Salt
Some Pomegranate
For serving, place some of the mutabal topped with cucumber salad in lettuce leaves (or endive) and decorate with some pomegranate, and bon appetit.
