Russian scientists have developed a new functional cheese designed to strengthen the immune system, according to TV BRICS, highlighting a growing focus on health oriented food innovation.
Researchers from the Higher School of Medical Biology at South Ural State University have created a soft brined cheese enriched with berberine, a bioactive plant compound known for its antioxidant and anti inflammatory properties. The university said the product is intended to support immunity while also improving metabolic and digestive health.
Berberine, which is found in barberry and other medicinal plants, has been shown to help prevent gastrointestinal disorders, regulate blood cholesterol, support liver function and accelerate metabolism. Food products containing the compound are also linked to improved immune system performance.
To prevent berberine from losing its effectiveness during production, the research team developed a new delivery system using a specially formulated emulsion. The technique allows the bioactive substance to remain stable and biologically active throughout the cheese making process.
Lecturer Ammar Kadi said the emulsion, produced through ultrasonic treatment, ensures that the antioxidant remains intact and is absorbed by the body more efficiently, giving the enriched cheese added health value.
The developers said the cheese can be stored for between one and three years, depending on the salt concentration in the brine. Both the recipe and the production technology have been patented, paving the way for commercial production.
