Ingredients:
• 2 cups all-purpose flour
• 1 cup granulated sugar
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 3 large eggs
• 1/3 cup unsalted butter, melted
• Zest of 2 oranges
• 1 cup dried cranberries
• 1 cup shelled pistachios, chopped
Directions:
. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
. In a separate bowl, beat the eggs and then add the melted butter and orange zest. Mix well.
. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
. Fold in the cranberries and chopped pistachios until evenly distributed in the dough.
. Divide the dough in half and shape each portion into a log on the prepared baking sheet.
. Bake for 25-30 minutes or until the logs are golden brown and firm to the touch.
. Allow the logs to cool for 10 minutes, then slice them into biscotti-shaped pieces.
. Place the slices back on the baking sheet and bake for an additional 10-15 minutes, or until they are crisp and lightly browned.
