Delicious biscuits are the perfect companion with morning coffee or afternoon tea at sunset, so you can make them on your day off and enjoy them throughout the week. You can also replace cranberries or pistachios with available nuts and any delicious fruits available to you, and do not let anything deprive you of this. The biscuits are delicious. Ingredients:

• 2 cups all-purpose flour

• 1 cup granulated sugar

• 1 teaspoon baking powder

• 1/2 teaspoon salt

• 3 large eggs

• 1/3 cup unsalted butter, melted

• Zest of 2 oranges

• 1 cup dried cranberries

• 1 cup shelled pistachios, chopped

Directions:

. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

. In a separate bowl, beat the eggs and then add the melted butter and orange zest. Mix well.

. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

. Fold in the cranberries and chopped pistachios until evenly distributed in the dough.

. Divide the dough in half and shape each portion into a log on the prepared baking sheet.

. Bake for 25-30 minutes or until the logs are golden brown and firm to the touch.

. Allow the logs to cool for 10 minutes, then slice them into biscotti-shaped pieces.

. Place the slices back on the baking sheet and bake for an additional 10-15 minutes, or until they are crisp and lightly browned.
