Winter Turkey salad and Halloumi cheese recipe by chef Shahir Massoud is a very delightful dish that provides our bodies with many beneficial elements.
Chef Shahir Massoud
8 slices Turkey Bacon (chopped)
2 Tbsp olive oil
8 slices halloumi cheese
3 Tbsp butter
1 juiced blood orange
1 Tbsp honey
1 Tbsp Dijon mustard
Salt and pepper
1 Tbsp red vinegar
6 cups of baby kale
1 head of endive (chopped)
2 peeled and sliced blood oranges
1/2 pint blackberries
1/4 cup toasted and chopped hazelnuts
Heat olive oil in a pan over medium heat, add halloumi cheese and sear for 3 to 4 minutes. Remove cheese and cook Turkey Bacon in the same pan for 5 to 6 minutes or until crispy and golden brown.
Add butter to the pan on medium-low and reduce for 2 to 3 minutes. When browned, add blood orange juice, honey, and mustard, along with salt and pepper to taste. Transfer to a measuring cup and add red wine vinegar. Whisk well to combine.
Add kale, endive, blood orange slices, blackberries, seared halloumi cheese, crispy Butterball Turkey Bacon, and hazelnuts to the platter. Drizzle on the brown butter vinaigrette and enjoy!
