Pumpkins are a really famous food especially during the fall season. They are both tasty and healthy with lots of vitamins and minerals. So, here is a recipe for healthy pumpkin oatmeal bars to be enjoyed for breakfast:

- Ingredients:
- ¼ a cup of all-purpose flour.
- 1 teaspoon of baking powder.
- ½ a teaspoon of salt.
- 1 teaspoon of pumpkin pie spice.
- ¼ a cup of light brown sugar.
- 2 ½ cups of rolled oats.
- ¾ a cup of pumpkin puree.
- ½ a cup of skimmed milk.
- 1 beaten egg.
- 1 teaspoon of vanilla extract.
- ¼ a cup of molasses.
- ½ a cup of dark chocolate chips.
- Instructions:
- In a large bowl, sift the flour, baking powder, pumpkin pie spice and salt before adding the oats and brown sugar. Stir till well combined.
- In another bowl, mix the pumpkin puree, skimmed milk, egg, vanilla extract and molasses together before adding the dry ingredients and mixing everything together.
- Fold the chocolate chips into the batter before pouring the batter into an 8×8-inch pan that is lined with a greased aluminum foil.
- Bake at 350 for 30 to 35 minutes or until done. Let it cool before cutting into medium sized bars and serving. Enjoy!
