Ingredients (for 6 to 8 portions)
- 150 g oatmeal
- 2 mashed bananas
- 2 eggs
- 100 ml almond milk or other plant-based milk
- 50 g honey or maple syrup
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 50 g dried fruit (walnuts, almonds, hazelnuts) or chocolate chips (optional)
Preparation
. Preheat the oven to 180°C.
. In a bowl, mix the mashed bananas with the eggs, milk, honey and vanilla extract.
. Add the oatmeal, yeast and cinnamon. Mix until you get a smooth dough.
. Add the dried fruits or chocolate chips if desired.
. Pour the mixture into a mold lined with baking paper.
. Bake for 30 minutes. Check the cooking with the tip of a knife, it should come out dry.
. Let cool before unmolding and enjoying.
. You can add a few pieces of apples or blueberries for an even more delicious fruity touch.
