Chiffon Cake
Ingredients:
2 ¼ cups cake flour (or all-purpose flour, sifted)
1 ½ cups sugar (divided)
1 tbsp baking powder
½ tsp salt
½ cup vegetable oil
7 large eggs, separated
¾ cup cold water
2 tsp vanilla extract (or lemon/orange zest for flavor variation)
½ tsp cream of tartar
Method:
Preheat oven to 325°F (165°C). Leave your tube pan ungreased (important for chiffon texture).
In a large bowl, whisk together flour, baking powder, salt, and 1 cup sugar.
In a separate bowl, beat egg yolks, oil, water, and vanilla until smooth. Add this mixture to the flour mixture and whisk until well combined.
In another clean bowl, beat egg whites and cream of tartar until foamy. Gradually add the remaining ½ cup sugar, beating until stiff glossy peaks form.
Gently fold the egg white mixture into the batter in 3 additions, being careful not to deflate the air.
Pour batter into the tube pan and bake for 55–65 minutes, or until a toothpick comes out clean.
Immediately invert the pan (upside down) and let the cake cool completely before removing.
Slice and serve plain, dusted with powdered sugar, or topped with whipped cream and fresh fruit.
