Food Blogger Mai Hendi Presents Maqluba's Recipe & Story

The Egyptian food blogger Mai Hendi is interested in presenting different recipes from all over the world on social media.

She is a pharmacist who is passionate about cooking and photography, therefore she is always professionally improving herself, and her material.

Here, Hendi presented the story and the recipe of the Maqluba

In ancient times, the dish was known as "Bazinganeya" (A dish made from eggplants), before it was renamed maqluba as several kinds of vegetables were used in the recipe.

Other sources claimed that this dish was presented on the occasion of Saladin's victory against the crusades and entering Jerusalem. It was said that the dish was praised by Saladin and asked the city's residents for its name, and they answered by mentioning the Maqluba as it was served by flipping down its layers up-side-down to the dish

By the way, none of these stories are confirmed until now.

Maqluba Ingredients:

1 kg of meat

3 eggplants, thickly-sliced

2 potatoes sliced as rings

2 tomatoes sliced as rings

1 tablespoon spices

1 tablespoon turmeric powder

salt and black pepper

1 teaspoon of cinnamon, dried coriander, and some cardamom powder.

Cooking oil

some pine for decoration

Some bay laurel papers, cardamom, mastic, and cinnamon stick for boiling the meat

Preparation:

Start by seasoning the meat with salt and black pepper and searing the pieces of meat with spices, cinnamon, bay laurel papers, cardamom, and mastic.

Next, add water, and leave it until being cooked

After that, fry the eggplant slices, before frying the potato rings. Next, season them with the spices.

Regarding the layering of the dish, bring a pot and put the eggplants slices on the sides of the pot, next place a layer of the tomato rings, followed by the potato rings, and add the meat on the surface.

Moving to the rice, soak the rice first for a half-hour, separate it from the water, and season it with the spices we used for the meat.

For cooking it, add the rice to the pan, and after that add some meat soup until soaking all the rice.

Next, let it be cooked on medium heated fire until the water is steamed, after that get the fire lower, and leave until being fully cooked.
