Eggplant Zaalouk Recipe from Morocco

Eggplant Zaalouk .. While Egypt is hosting the 32nd edition of Africa Cup of Nations; one of the most powerful football championships world-wide, (SEE) sheds light on the most famous dishes of the 24 countries taking part in the tournament.

Moroccan cuisine is known to be a mixture of different Arab cultures in the Middle East and Africa.

Here’s Eggplant Zaalouk; one of the most popular and delicious recipes in Morocco.

Eggplant Zaalouk

Ingredients

2 eggplants

2 tomatoes, diced

3 garlic cloves, minced

1 bunch parsley, chopped

1tsp paprika

tsp cumin

Olive oil

Pinch of salt, pepper, chili powder

Recipe

Cut eggplants in halves and brush with olive oil, then broil till it turns to golden brown color; it almost takes 15 minutes.

In a pan set on high heat, add some olive oil, then the diced tomatoes, garlic, cumin and paprika.

Cut the grilled eggplants into small cubes, with or without the skin, and place in the pan.

Finally add chopped parsley, keep stirring and cook from 15 to 20 minutes till the eggplant is tender.

Add salt, pepper, chili powder as desired and just enjoy the taste!
