Lemon Gooey Butter Cookies, is a delicious and quick treat, that can be made on the day off and stored in a metal box for a week.
Ingredients:
2 eggs
2 cups sugar
½ 1 teaspoon salt
1 cup cold butter
3 cups all-purpose flour
¼ 1 teaspoon of baking soda
1¼ teaspoon baking powder
1 tablespoon lemon juice
1 teaspoon of vanilla extract
1 tablespoon of grated lemon peel
Natural yellow food coloring drops
Directions:
In a large bowl, beat butter and sugar for 4 minutes until smooth like cream, then add eggs, vanilla, and lemon peel with its juice.
Add the flour, baking powder, baking soda, salt, and food coloring, and mix well, then make small cakes from the mixture.
Bake the pieces in the oven at 350 degrees for 9-11 minutes, take them out of the oven, and let them cool down. Coarse sugar can be sprinkled on top.
