Ingredients
200 gm all-purpose flour
40 gm powdered sugar
Pinch of salt
100 gm cold cubed butter
Egg yolk
2-3 m kg of frozen water
For filling
6 egg yolks
3/4 cup lemon juice (5-6 lemons)
sugar cup
Cup of room temperature butter cubes
3 mkg lemon zest
Directions
For the lemon curd
Put the egg yolk, sugar, and lemon juice together in a water bath over medium-high heat with continuous whisking for 10-12 minutes.
When the mixture starts to thicken like custard remove it from the heat and pour it through a sieve.
Add the butter gradually with mixing.
Finally, add the lemon zest. Pour the lemon curd into a jar, and keep it in the fridge.
For tart crust
Sift the flour and add the sugar and salt to it.
Add the cold butter cubes and mix between your hands until it becomes like sand.
Add the egg yolk and mix.
Gradually pour the water while mixing.
Knead until the dough comes together and becomes smooth.
Put the dough in the freezer for 30 minutes.
Then take it out from the freezer, and start rolling it then cut out 6 circles by the tart rings (this for the tart bottom) and 6 strips by knife ( for the side).
Place the circles and the stripes carefully in the tart rings and put it in the fridge for 1 hour.
Put the pie weight with a parchment paper inside the tart base to keep its shape while baking.
Bake in preheated oven at 170c for 15-20 min, then remove the pie weight and bake for another 5 min or until golden color.
Let the bases cool, then fill them with the lemon curd using a piping bag.
Leave the tart sets in the fridge for 3-4 hours then decorate with some blueberries before serving.
