Ingredients:
- 4 salmon fillets
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions:
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Season the salmon fillets with salt and pepper. Set aside.
3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
4. Add fresh spinach to the skillet and cook until wilted. Remove from heat and let it cool slightly.
5. In a bowl, mix the cooked spinach with shredded mozzarella and grated Parmesan cheese.
6. Roll out the puff pastry on a floured surface. Cut it into 4 equal squares.
7. Divide the spinach and cheese mixture evenly onto each puff pastry square.
8. Place a seasoned salmon fillet on top of the spinach and cheese mixture on each square.
9. Fold the puff pastry over the salmon, sealing the edges. Place the stuffed salmon Wellington seam side down on the prepared baking sheet.
10. Brush the puff pastry with the beaten egg for a golden finish.
11. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and the salmon is cooked through.
12. Serve the spinach and cheese stuffed salmon Wellington hot and enjoy!
