Ingredients:
For the Sandwich:
2 slices of sourdough or whole-grain bread
1 cup cooked chicken breast, diced or shredded
2 slices of mozzarella or provolone cheese
2 tablespoons fresh basil pesto
1/4 cup roasted red bell peppers, sliced
1 tablespoon olive oil or softened butter
Instructions:
Step 1: Prepare the Ingredients
Cook Chicken: If you don't have pre-cooked chicken, season chicken breast with salt, pepper, and Italian herbs, then grill or pan-fry until fully cooked. Let it cool and shred or dice it.
Spread the basil pesto on one side of each bread slice.
Step 2: Assemble the Sandwich
On one slice of bread (pesto side up), layer mozzarella cheese, roasted red bell peppers, cooked chicken, and another slice of mozzarella cheese.
Top with the second slice of bread, pesto side down.
Step 3: Grill the Sandwich
