Grandmothers’ Fitr Cookies Tricks Presented by Granddaughters

Fitr cookies or Kahk could be presented in various recipes according to the favorite taste and texture of every family.

Writer Shahira Galal recalled the memories of making kahk, especially while singing the famous fest song of Um Kalthoum for welcoming the fest eve and enjoying the smell of the hot butter mixing with the flour.

She also recalled the strict instructions of her grandmother for her neighbors while gathering to form the cookies, her seriousness was equal to the strict character of a leader in a war for saving the world.

Galal added that her grandmother didn’t prefer the normal cooker’s oven, but she delighted in the huge ovens made by the factories of the Ministry of Military Production. She baked all her bakeries such as Brioche, cookies, ghoraiba, and others in that tiny oven.

It was really challenging for such a small oven to adapt to her grandmother’s ambitions for making such delicious bakeries, however, this small oven surrendered to her hopes, broke the rules, and accepted her orders, it was like moderating the world in front of a 7 pm show, the narrator highlighted.

Therefore, Galal presented her grandmother’s recipe for cookies that gave her lovely, tasty, and crunchy kahk.

*For making the Agameya (honey) filling, do the following steps: first off, in a skillet add 1 tablespoon of melted butter, 1 tablespoon of white flour, 1 tablespoon of sesame, and half a tablespoon of cookies scent.

Next, mix them together, and add gradually a half cup of bee honey. Keep blending the mixture until it thickened and is suitable for forming the mixture in the shape of small balls.

Don’t forget to turn the heat off shortly before the mixture had the required texture because it would be thickened more after cooling. Also, you can add any kind of nuts.

Kahk Ingredients

1/5 kilo of biscuits flour

¼ kilo of extremely hot melted butter

3 tablespoons of sesame

1 tablespoon of kahk scent

1 tablespoon of sugar

¾ cup of warm water

1 tablespoon of baking soda

1 teaspoon of yeast

Some salt


Mix yeast with the warm water and sugar, and leave it until the yeast activates, after that heat the melted butter, and pour the butter onto the flour after adding all the dry ingredients and mix them well by hands and make sure that the full amount of flour is mixed with butter.

Shortly add the mixture of yeast, followed by the water, and blend them slowly.

Heat the oven, and leave the dough to rest for ten minutes.

After that form the cookies, and add the filling before entering them into the oven that was preheated at 180 degrees.

Leave the pieces for 20 minutes, until the bottom of the cookies is more reddish, next, use the oven’s grill element for only two minutes.

Some additional tips:

Cover the pieces of cookies with sugar immediately before serving or eating

Make sure that the weight or the size of every piece is too close, around 30 grams each.
