Fashion Designer Riham Farouk’s Green Rice with Shrimp

The Egyptian designer Riham Farouk made a few adjustments on the famous Italian dish the Risotto to come up with her green rice and shrimp recipe. The recipe is easy, delicious and perfect for family gatherings.

• The Ingredients

1. 1 kilogram of Egyptian rice.

2. 1 kilogram of peeled medium shrimp.

3. 6 shrimps unpeeled.

4. 2 cut onions.

5. Broth, preferably Maggie.

6. ½ kilogram of cream.

7. Green food coloring.

8. Dill.

9. Salt.

10. Pepper.

11. Cardamom.

12. Garlic.

13. Mastic.

14. Bay laurel.

15. Butter.

16. Flour.

17. Milk.

• Steps

1. Cook the onions till they become golden brown before adding the rice, broth, dill, food coloring and salt. Stir to combine everything together, then let the rice cook on low heat.

2. In a small pan, cook the peeled shrimp with butter and garlic. Season with salt and pepper and stir till thoroughly cooked. Make sure to take it off the heat before the resulting sauce dries.

3. In a different pan, grill the unpeeled shrimp with cardamom, mastic and bay laurel on high heat to add that delicious grilling taste. Add some water to extract the grilling taste before setting aside.

4. In another pan melt some butter with milk and flour before adding the cream. Make sure that the sauce’s texture is not as watery as a soup’s and not as thick as a béchamel’s.

5. Finally, add the sauce resulting from grilling the unpeeled shrimp to our creamy sauce. Stir and adjust the sauce’s texture before adding the cooked peeled shrimp.

• Presentation

Transfer the rice to a big bowl, make a hole in the middle of the bowl before placing the creamy peeled shrimp in the hole. And Enjoy!!
