Egyptian Food Blogger Mai Hendi introduced the Peach galette recipe to enjoy this summer. The pie has an amazing smell and taste that will fill the house with an extraordinary aroma.
Peach galette combines a flaky, crunchy, and fluffy pie crust with peaches, almond cream, and other delicious elements.
*Ingredients
Two and a half cups flour (315gm)
1 cup cold butter (225gm cubes)
2 tbsp sugar
5-7 tbsp of iced water
A pinch of salt
* For filling
4-5 peaches
2 tbsp brown sugar
1tbsp starch
A hint of cinnamon
A pinch of nutmeg powder
Lemon juice
* For the almond cream
1 cup of crushed almonds
1/2 cup of butter
1/2 cup of sugar
An egg
Vanilla
* Method
To make the crest, we add the sugar and salt to the flour and stir well. Take the butter cubes out of the refrigerator, just a quarter of the amount, put them on the flour, and mix them together.
Bring the remaining butter cubes and press on them with your fingers so that they remain flat and place them in the freezer for 10 minutes. (Check the heat of the kitchen so that the butter does not melt)
Take it out and start adding the water a little bit to make it firm. Then, put it on a plastic roll in the kitchen or mat and start folding it together. Place the wrap, which will make two mediums, in the fridge for two hours.
To get the almond cream ready, beat the butter with the electric mixer for a minute, add the sugar, and beat again until it gets fluffy. Next, add the ground almonds and stir and finally place the egg and the vanilla.
PS, you can take half of the quantity only and use the other half the next day in an almond croissant recipe, for example.
Cut peaches into thin slices, add sugar, cinnamon, nutmeg, starch, and lemon juice, and stir. Sprinkle flour on the surface of the crest and on the dough we start rolling it out in a circular shape.
Place a layer of almond cream in the middle only and gently arrange the peaches on top of the cream.
Close the dough from the edges on the filling, wipe it with an egg and a hint of vanilla, sprinkle it with a pinch of coarse brown sugar, and put it in a pre-heated oven at 180 degrees for 25-30 minutes or until it takes a golden color. Finally, enjoy your meal!
