Egyptian fashion designer Nagham El Naggar did as she has learned delicious dishes from her mother.
And she now teaches us immediately with attractive and delicious dishes.
Because the dishes that we taste in the family’s house remain in our conscience and when we visit that house we try to learn the secrets to reach this taste and this stylized form of the dishes.
The chicken with a flavor and good smell
The chicks are thoroughly washed with flour, vinegar and lemon juice and dried well.
Prepare the spices bouquet, which includes celery carrot, onion, cardamom, cloves, black pepper.
Inside the chicken, we put half an onion, sticks of celery, a piece of carrots, 2 cloves, black pepper, cereal and 2 seeds of cardamom.
Close the chicken to the legs.
Boil the water and put the chicken, remove the froth from the soup after lifting it, we put 2 celery sticks, 2 pieces of carrot. Let the chicken to simmer within an hour.
*The Roasting
There is an important note for an excellent roasting.
Mix 2 spoons of milk with a pinch of cinnamon, paprika, salt and turmeric.
Brush the chicken with this mixture, heat the ghee or oil and brown from all sides and take into account that the milk painting speeds the process of frying.
Immediately after the roasting and put it in a dish and add and crushed pepper to get delicious taste.
Roasting is preferable in a bowl with high sides for easy roasting and a better result.
The second dish: Rice with mixture
*Ingredients
Cups of rice 2
1 cup of vermicelli
2 pieces of cinnamon
3 cloves
1/2 small spoonful of various spices
Way
Heat the oil well, then add cinnamon sticks, cloves, cardamom and smear them quickly, then add the rice and stir until the color changes to the golden color and raise the mixture from the pot.
Then put the vermicelli in hot oil and fry until the color becomes almost the same color as the rice, then put it over the rice and stir and pour on it 4/3 cup water or soup and salt as desired.
For flavors you can choose cardamom, cloves and cinnamon.
It is preferable to pick them up from rice because some people do not like them in whole size in rice.
*The mixture
Chopped meat is roasted by slicing onions and garlic in two spoons of oil or margarine.
Fry the meat with onion, powdered garlic, salt and pepper.
Add colored pepper, meat spices and small cubes of meat.
Leave them to dry and cover the
Mixture until it almost dries.
The minced meat can be replaced by the liver of chicken, gills, and hearts and treated in the same way, but it is preferable to boil it once before the dish and dry its water to get rid of any smell and cook in the same way as the meat and add the rice instead of the minced meat.
Roast nuts with raisins and sprinkle meat and nuts on rice.
