Ingredients:
Dough:
3 cups of all-purpose flour
1 tablespoon of baking powder
A pinch of salt
1 packet of instant yeast
1/4 cup of corn oil
1 1/4 cups of warm water (you can add warm water with quantity that suits the kind of flour, it depends on the texture of the dough after mixing)
Instructions
Dough:
Start with testing the Yeast: blend the yeast in warm water with a teaspoon of sugar to test its activity. This is an important step before proceeding.
Place the flour, salt, and baking powder in a mixer bowl and mix them.
Add the yeast blend to the flour mixture once the yeast is activated
Begin kneading the dough, when it starts to blend together, add the oil.
Adding the oil helps you to have a soft, slightly sticky dough.
Cover the dough and leave it to rise for about 30 minutes before rolling it out for filling.
For the Filling:
Ingredients:
500 grams of fresh spinach, finely chopped
In a pan, sauté diced onions in a little corn oil until they soften. Make sure to not let them turn brown.
Add the spinach to the onions and season with salt, sumac, and add molasses to have a delightful tangy flavor
Mix well and cook until the spinach color changes, then remove it from the heat and let it aside.
Drain any extra liquid by placing the spinach mixture in a strainer before spreading it on the dough.
Forming and Baking:
Roll out the dough with a rolling pin into a rectangular shape for easy rolling, as shown in the photos.
You can add mozzarella cheese over the spinach filling which is optional choice.
Roll the dough like a Swiss roll and cut it into slices.
Brush the tops with milk and sprinkle sesame seeds for garnish.
