Summer's heat is a key factor in low appetite during this season, so having an easy and delicious dish is the best solution. So, depending on seafood like shrimp, and squid would be great.
Here, Egyptian food blogger Ameera Aboulseoud presented a lovely and delicious shrimp Hyderabadi biryani that is a well-known dish in Indian cuisine.
The recipe for the shrimp Hyderabadi biryani is as follows:
First of all, get your shrimp after being cleaned and peeled. After that, season the shrimp with salt, and turmeric for 30 minutes.
In a pan, fry the chopped onions until golden. Then, place the onions away from the pan.
In the same pan, put bay leaves, star anise, chopped garlic, chopped ginger, chopped tomatoes, and chili. Mix all this on low heat until the mixture thickened.
Next, add yogurt, cumin, chili powder, and coriander powder, and salt. After that, add shrimp, and stir for 7 minutes before removing the pan from the heat.
For the rice, you need to soak the Basmati rice for half hour, then drain the rice.
For cooking, add the rice after draining it to 3 cups of boiling water with salt and a few drops of oil. Bear in mind that rice shouldn't be overcooked, so keep the quantity of rice as 1/3 the quantity of water.
Rice would need 15 minutes to be cooked, don't forget to drain the rice after cooking.
Next, bring a pot and cover the bottom of it with ghee, and add part of rice, shrimp, caramelized onions, green coriander, and mint. Repeat this step with the rest of the ingredients.
You can enrich your rice by adding a small cup of boiled water with saffron.
After that, cover the pot well, you can use a sheet of aluminum foil beneath the cover of the pot.
Return the pot to the low heat for 10 minutes until it is well cooked, now, serve them to your serving tray.
