Ingredients:
1 package (16.5 oz) refrigerated sugar cookie dough
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla extract
Assorted fresh fruits (strawberries, mandarin oranges, pineapple, kiwi, blueberries, and grapes)
1/4 cup apricot preserves
1 tablespoon water
Directions:
Preheat your oven to 350°F (175°C). Press the cookie dough into a 12-inch pizza pan. Bake for 18-20 minutes or until golden brown. Allow to cool completely.
In a small bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Spread over the cooled crust.
Arrange the fruit in a rainbow pattern or as desired over the cream cheese layer.
In a small saucepan, heat the apricot preserves and water over low heat until warm. Brush over the fruit for a shiny finish.
Refrigerate for at least 1 hour before serving. Cut into wedges.
