All you need is:
Base:
350g crunchy cookies, crushed
100g unsalted butter, melted
Cheesecake:
200g milk chocolate, melted & cooled
350ml double cream, cold
500g cream cheese, room temp
120g icing sugar
100g crunchy cookies, broken into pieces
Topping:
200g dark chocolate, broken into chunks
200ml double cream
8 crunchy cookies, halved
Tips:
Make sure your cream cheese is at room temperature
Let the milk chocolate cool before adding to the cream cheese & icing sugar mix
Allow the ganache to cool for at least 15 mins before pouring over the cheesecake
You can always add the cookies to the top just before serving to keep them crunchy, they will stick to the ganache
