Thanksgiving is a lovely family time, but the continued increase in material prices makes it somehow challenging to prepare a crowded dinner table without hurting your budget. So, here is an affordable and nice Turkey recipe for couples.
Ingredients:
Cornbread Stuffing
1 loaf of cornbread, torn into 1-inch pieces. The weight of it could be around 450 kgs.
1 large egg
¾ cup chicken stock
1 ½ cups of diced sweet onion
¼ cup of chopped fresh parsley
2 teaspoons dried thyme
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Turkey
4 tablespoons of softened unsalted butter
1 tablespoon chopped fresh parsley
2 teaspoons dried thyme
1 2-pound piece of skin-on, bone-in turkey breast
2 teaspoons kosher salt
freshly ground black pepper
Gravy, for serving
Green Bean Casserole
1 can of frozen green beans
1 can of cream of mushroom soup
1 cup Fried Onions
Directions:
Preheat the oven to 190°c, and put a baking sheet with foil on the tray of the oven.
Start with making the stuffing:
Mix the cornbread, egg, chicken stock, onion, parsley, thyme, salt and pepper in a large bowl. Spread on half of the prepared baking sheets and let rest for 10 minutes.
Make the turkey:
Mix the butter, parsley, and thyme in a small bowl. Spread the butter mixture under the skin of the turkey breast. Season the skin with the salt and pepper, then place on top of the stuffing.
Make the green bean casserole: In a medium bowl, mix together the green beans and cream of mushroom soup.
After 30 minutes of baking, remove the baking sheet from the oven and transfer the green bean mixture to the remaining quarter of the pan. Top with the fried onions.
Return the pan to the oven and cook until the internal temperature of the turkey breast reaches 165°F (75°C).
Remove the baking sheet from the oven. Cover the tray with a piece of foil and leave it for about 10 minutes while the turkey rests.
Serve it with gravy and other sides.
