3 Healthy Pumpkin Recipes to Enjoy This Fall ... Easy Cooking

Fall is finally here and it is the season to enjoy the yellowing leaves and spicy food. Also, there is no doubt that pumpkins are one of the most famous fall foods. So, here are 3 healthy pumpkin recipes to enjoy this fall:

  • Pumpkin Soup
  •  

    • Ingredients:

     

    • 1 tablespoon of extra-virgin olive oil.
    • 1 large onion chopped.
    • 4 minced garlic cloves.
    • 16 cups of chopped pumpkins.
    • 4 cups of chicken broth.
    • Salt and pepper.
    • ½ a cup of skimmed milk or full fat milk.

     

    • Instructions:

    • In a soup pot, heat the oil over medium heat before adding the onion and garlic. Cook till it turns golden.

    • Add the pumpkins and broth to the pot then season with salt and pepper. Bring to boil before reducing the heat and leaving it to simmer for about 30 minutes or until the pumpkins are soft and mushy.

    • Let the soup cool before pouring it into a blender and blending till smooth.

    • Gradually, stir in the milk then serve and Enjoy!

  • Pumpkin Pancakes

    • Ingredients:

    • 1 cup of whole wheat flour (preferably white whole wheat flour).
    • 2 teaspoons of baking powder.
    • A pinch of salt.
    • ½ a teaspoon of cinnamon.
    • 1 teaspoon of pumpkin pie spice.
    • 1 cup of buttermilk, skimmed milk or any milk of choice.
    • 1 egg.
    • ¼ a cup of pumpkin puree.
    • 2 tablespoons of honey or maple syrup.
    • 1 teaspoon of vanilla extract.
    • 3 tablespoons of chopped pecans.

     

    • Instructions:

    • Mix all the dry ingredients together in a bowl : Flour, baking powder, salt, cinnamon and pumpkin pie spice.

    • In another bowl, mix all the wet ingredients together : milk, egg, pumpkin puree, vanilla extract and only 1 tablespoon of honey.

    • Combine the dry ingredients with the wet ingredients and mix well till completely smooth. Then fold half the pecans into the pancake batter.

    • Grease a pan and heat on medium-low heat before adding ¼ a cup of the pancake batter. Cook the pancake for 1:2 minutes on each side or till golden brown. Repeat till all the batter is gone.

    • Stack the pancakes over each other and top with the honey and pecans before serving. Enjoy!

  • Pumpkin Oatmeal
  •  

    • Ingredients:

    • ½ a cup of rolled oats.
    • ½ a cup of skimmed milk or any milk of choice.
    • ½ a cup of water.
    • ¼ a cup of pumpkin puree.
    • A pinch of pumpkin pie spice.
    • A pinch of cinnamon.
    • 3 teaspoons of honey.
    • 1 tablespoon of pecans.

     

    • Instructions:

    • Add the oats, milk, water, pumpkin puree, cinnamon, pumpkin pie spice and only half of the honey to a cooking pot. Mix well and cook on medium heat until the mixture thickens.

    • Pour the mixture into a bowl and top it with the pecans and honey before serving. Enjoy!
