Fall Cooking: Healthy Sweet Potato Hash Browns

Hash browns are one of the most famous and delicious breakfast foods out there but sometimes they can be bad for your diet. So, here is the recipe for a healthy sweet potato hash browns:

  • Ingredients:

 

  • 4 ½ cups of peeled and shredded sweet potatoes.
  • 4 tablespoons of extra-virgin olive oil.
  • ½ a teaspoon of salt.
  • ½ a teaspoon of black pepper.
  • ¼ teaspoon of garlic powder.
  • ¼ a teaspoon of chili powder (optional)

 

  • Instructions:

 

  • In a large bowl, add the sweet potatoes, 1 tablespoon of olive oil, salt, pepper, garlic powder and chili powder before combining everything together.

 

  • Heat a large skillet over medium-high heat before adding 1 ½ tablespoons of olive oil and once the oil is hot, scoop ½ a cup of the sweet potato mixture into the pan and flatten it into a patty. Repeat two more times so that you have 3 patties in the skillet.

 

  • Cook the patties until they are golden brown on each side from 6 to 8 minutes before repeating again with the remaining oil and batter.

 

  • Serve hot and Enjoy!

You can add some cheese to these healthy sweet potato hash browns. Also, they are best served with grilled vegetables and eggs. Stay Safe!
