There is no better way to celebrate and enjoy the Autumn season other than to indulge in a fudgy piece of Brownies that is both Healthy and Delicious. So, here is the recipe for healthy sweet potato brownies to enjoy it during the Autumn:
- Ingredients:
- 1 cup of sweet potato puree.
- 2/3 a cup of maple syrup.
- ½ a cup of almond butter or peanut butter.
- 1 teaspoon of vanilla extract.
- 1 ½ tablespoons of avocado oil, melted coconut oil or olive oil.
- ½ a cup of cocoa powder.
- 1 teaspoon of baking powder.
- ½ a teaspoon of salt.
- 2/3 a cup of oat flour.
- ½ a cup of chopped pecans.
- ¼ a cup of dark chocolate chips.
- Instructions:
- Preheat the oven to 176 degrees C and line an 8×8-inch baking pan with parchment paper. Set aside.
- In a large bowl, add the sweet potato puree, maple syrup, almond butter, avocado oil and vanilla extract. Mix until well combined.
- Add the cocoa powder, salt, and baking powder. Stir till combined before adding the oat flour and stirring till a thick batter is formed.
- Transfer the batter to the parchment-lined baking pan and spread till an even layer is formed before topping it with the pecans and chocolate chips.
- Bake on the center rack for 28 to 32 minutes or until the edges are slightly dry. Let the brownies cool.
